The time it takes to prove varies according to the dough, formulation and the temperature, meaning the fermentation process is critical to obtain the sought after volume. When it comes to temperature, it all depends on the bread you are making, the desired flavour and texture you seek, and of course your baking schedule.
Spooner’s range of final Provers deliver exceptional internal conditioning, covering temperature, humidity, time and airflow control providing the best possible start to your baking process.
The Spooner range includes Swing Tray Provers, Tunnel Provers and Static Provers, all of which come with steam, gas, electric or dual fuel (gas/electric) heating options and steam or water atomisation for hydration. Also available are single or two zone conditioning options giving further opportunities to enhance dough development.
An accurate and efficiently controlled single enclosure prover, capable of applying heat, cool air, humid air and de-humidifying all whilst having a variable dwell time, is essential to produce a varied range of baked products.
